When I was little my mother made delicious pancakes for evening tea time. But Those pancakes are different from the common American pancakes that everyone knows. This Sri Lankan coconut pancakes made with special sweet coconut filling. Normal Sri Lankan coconut pancakes / pol pani pancakes are made by adding milk and eggs, but my mother didn't add them, She made them with few ingredients, but so tasty! First she added flour, salt and a bit of turmeric (for yellow color) to a large bowl and was whisking with adding as much as needed water until it had a thick batter. After that, she made sweet coconut filling form grated coconut, a pinch of salt and kithul treacle. When I was little my grandfather made kithul treacle in house. Therefore my mother used kithul treacle for her cooking. She boiled kithul treacle and added grated coconut and pinch of salt, then mixed until combined. After that, brushed oil onto a roti pan and poured 1/3 cup batter then, spread the batter all over the pan using a spoon. Cooked it on medium heat on 2 minutes and flipped it and cooked 1 minute. As soon as the pancake is cooked take out and wrapped the pancake with sweet coconut filling.
